Recipe: Warm Egg and Spinach Sandwich



  • 1/4 Cup low-fat cottage cheese
  • 1 Whole wheat English muffin
  • 1/2 Cup baby spinach
  • 1 Thick tomato slice
  • 1 Egg, scrambled
  • 1/2 oz Pesto

Spread cottage cheese over each side of a toasted muffin. Top 1 muffin slice with baby spinach leaves and tomato slice. Top the other with a scrambled egg, pesto, and salt and pepper to taste.
